5 Ingredient Banana Peanut Butter Oatmeal Breakfast Bars

"If you’ve got some overripe bananas and want to make something that isn't banana bread, then this is the perfect easy (and healthy) recipe!"

So I realised the other day that whenever I have a bunch of bananas that are lookin a little tired, my immediate thought is banana bread. And I know I can freeze them for smoothies or to use later but I wanted to make something completely different to add to my rotation of banana recipes.

So this is my answer to that, my peanut butter, banana and oat slice (…or cookies!). It’s an oat slice that has only 5 ingredients and is honestly fool proof. You basically throw some things in a bowl, mix it up and chuck it in the oven. You can make them into a cookie or a bar and then get as creative with the toppings as your heart desires.

So, if you’ve got a couple overripe bananas lying around and want to make something that isn’t banana bread, this is for you!

Ingredients to make my healthy peanut butter and banana oat slice:

3 bananas, mashed

1 cup peanut butter

1 egg

2 tbsp brown sugar

3 cup rolled oats

Pinch of salt

How to Make It

Preheat the oven to 180C.

Add the peanut butter, banana, and sugar to a bowl and mix to combine. Add the egg, mix again, then stir in the oats.

Transfer the mixture to a lined backing dish, or scoop onto a tray into whatever shaped cookies you like. They won’t change shape during cookies, so if you want a flat cookie, press them into that shape before baking.

Bake for 40 minutes for the whole slice, or 20-30 if making cookies. The cooking time will vary quite a lot based on how thick it is, so it’s best to keep an eye on it from the 20 minute mark and pull it out when it’s golden and crisp on the outside. They will also firm up once they cool, so don’t worry if they are a little soft straight from the oven.

Optionally, drizzle with melted chocolate to finish.

    Made this today with my overripe bananas and it will definitely be made again. My two very picky boy (5 & 7) absolutely love it and cleared the while dish. I was shocked as Mr 5 won’t touch anything that has banana. Great for lunchboxes and also as a snack between meals. THANKYOU! THANKYOU! THANKYOU!

  4. I want to make but hate hate hate peanut butter, do you think it would work with maybe almond butter?

    1. I haven’t tried it but there’s no reason it shouldn’t ☺️ I think someone in my instagram comments for this video said they did and it worked!

    Just made these today. Very yummy and easy! Was just wondering if you know what I could use as an alternative to peanut butter for a school safe snack 😊

    1. I’m so so happy you liked them! Thank you for trying it out 😊 I haven’t tried it but some people have mentioned cookie butter, another nut butter or using yoghurt. I’ll have to experiment but hopefully that’s a start x

    1. So glad you liked them! They should last fine for around 5 days in the fridge. Not too sure about freezing as I haven’t tried it, but I’m sure they should freeze well as they are quite dense 🙂 Hope that helps!

        Love this recipe. I have frozen them and they defrost really well. They’re a great snack and I love the slow release carbs and are very popular with family and friends. Easy to make vegan by substituting 1/4 cup applesauce for the egg. For other Aussies: I use Mayver’s extra crunchy pb for the extra crunch – also no sugar (buy it when it’s on special!) One time I added Reece’s peanut butter drops but they’re not needed with a good crunchy pb. I do make them a bit less healthy by adding chopped up milk choc buttons – they melt a bit into the mix – but if I do that I don’t do the choc drizzle on the top. We have played around with the recipe – dk choc was a bit too bitter. Adding a ‘good’ pinch of salt is important, esp if the pb isn’t very salty.
