5 Ingredient Banana Peanut Butter Oatmeal Breakfast Bars

I realised the other day that whenever I have a bunch of bananas that are looking a little tired, my immediate thought is banana bread. I know you can freeze them for smoothies or to use later but I wanted to make something completely different to add to my rotation of banana recipes... so this is my answer to that. It's basically an 5 ingredient oat slice that is honestly fool proof. You basically throw some things in a bowl, mix it up and chuck it in the oven. You can make them into a cookie or a bar, and then get as creative with creative with the toppings as you wish. So yeah, if you’ve got a couple bananas lying around and want to make something that isn't banana bread, this is for you.

Ingredients
  

  • 3 bananas mashed
  • 1 cup peanut butter
  • 1 egg
  • 2 tbsp brown sugar
  • 3 cup rolled oats
  • Pinch of salt

Instructions
 

  • Preheat the oven to 180C
  • Add the peanut butter, banana, and sugar to a bowl and mix to combine. Add the egg, mix again, then stir in the oats.
  • Transfer the mixture to a lined backing dish, or scoop onto a tray into whatever shaped cookies you like. They won't change shape during cookies, so if you want a flat cookie, press them into that shape before baking.
  • Bake for 40 minutes for the whole slice, or 20-30 if making cookies. The cooking time will vary quite a lot based on how thick it is, so it's best to keep an eye on it from the 20 minute mark and pull it out when it's golden and crisp on the outside. They will also firm up once they cool, so don’t worry if they are a little soft straight from the oven.
  • Optionally, drizzle with melted chocolate to finish.
