Bacon, Zucchini & Olive Fettuccini

My sister is obsessed with pasta so whenever we are both working from home I will always make her some variation of pasta for lunch. This one is super quick and easy, extremely versatile if you want to use other ingredients you might have lying around, and you can literally smash out the sauce before the pasta finishes cooking.

Ingredients

5 rashers of middle, diced

1 brown onion, diced

5 cloves garlic, thinly sliced

1 chilli, thinly sliced

1 medium zucchini, grated

Small handful of olives, sliced

2 tbsp tomato paste

1/3 cup milk

200g fettuccini

How to Make It

  1. Boil your pasta in a pot of salted water.
  2. While the pasta is boiling, fry off the bacon in a medium saucepan over med-high until the fat begins to render out.
  3. Add the onion, garlic and chilli and sauté until the ingredients soften and the onion becomes translucent, then add the tomato paste and sauté for a minute or two.
  4. Add the zucchini and olives, a splash of pasta water, and let that simmer for a few minutes.
  5. Add the milk and simmer again until the sauce begins to thicken slightly, about 3 minutes.
  6. Add the cooked pasta, toss everything together and add a splash more pasta water or milk if the sauce is a little thick. Alternately, if the sauce is still a little runny, let is simmer away for a few more minutes to allow some of the liquid to evaporate.
  7. Top with fresh basil and grated parmesan and serve.
