To be totally honest, I hate the flavour of cooked avocado, so I was pretty sceptical making these. But I had way too many avocadoes on hand and decided to experiment. They honestly taste just like a Woolies mud cake (Aussies will understand) and are perfectly moist and chocolatey with virtually no flavour of avocado.
Avocadoes – (duh) you want them ripe so that the flesh is soft, but not too ripe that they start tasting whiney. This will overpower the flavour of the chocolate and make it taste avocado-y. Mine were medium/average sized (about the size of my palm), so if yours are a little bigger or smaller, you might need to adjust the amount slightly.
Sugar – Regular white sugar is fine. You can use table sugar or caster sugar.
Cocoa powder – Just any old cocoa powder will do the trick.
Baking powder – You can use self raising flour instead of plain flour if you don’t have any baking powder.
Milk – You can use any milk here as its main purpose is just to thin the batter slightly. You can use a plant milk to make it dairy free or just go for regular old cow’s milk.
Salt – salt is important for balancing out the sweetness but you can leave it out if you want to.
Eggs – not that I’ve tried it, but I’m sure you could use an egg substitute to make these vegan / egg free if you’d like. .
Plain flour – If you don’t have plain flour, you can use self raising flour instead, but just leave out the baking powder if that’s the case.
STEP 1
Add your avocado flesh, egg, milk and sugar to a food processor and puree until nice and smooth. Alternately, you can mix these together by hand but I’d recommend passing it through a sieve just the make sure that there are no chunks of avocado, otherwise these will show up in the final bake.
STEP 2
Transfer the avocado mixture to a bowl and mix in the cocoa powder, salt and baking powder. Then fold in the flour until just combined.
STEP 3
Transfer to a lined baking tray, smooth off the top and optionally, add some chopped chocolate and press down slightly into the mix. You can add different toppings if you want, such as a swirl of peanut butter or white chocolate chips.
STEP 4
Bake in a preheated oven at 180˚C for 15-20 minutes (depending on your oven). Check that they’re done by inserting a skewer. If it comes out with raw, wet batter, leave them for another 5 minutes then check again.

Leave to cool, cut into pieces and serve.
