To be totally honest, I hate the flavour of cooked avocado, so I was pretty sceptical making these. But I had way too many avocadoes on hand and decided to experiment. They honestly taste just like a Woolies mud cake (Aussies will understand) and are perfectly moist and chocolatey with virtually no flavour of avocado.
Add your avocado flesh, egg, milk and sugar to a food processor and puree until nice and smooth. Alternately, you can mix these together by hand but I'd recommend passing it through a sieve just the make sure that there are no chunks of avocado, otherwise these will show up in the final bake.
Transfer the avocado mix to a bowl and mix in the cocoa powder, salt and baking powder. Then fold in the flour until just combined.
Transfer to a lined baking tray, smooth off the top and optionally, add some chopped chocolate and press down slightly into the mix.
Bake in a preheated oven at 180˚C for 15-20 minutes (depending on your oven). Check that they're done by inserting a skewer. If it comes out with raw batter leave them for another 5 minutes then check again.
