Method
- Add all of the ingredients, expect the white chocolate and coconut oil, to a blender and blitz until completely smooth.
- Transfer to a silicon mold, popsicle molds, or plastic cups with a popsicle stick inserted, and freeze overnight until solid.
- Melt white chocolate and coconut oil in the microwave for a minute, or until completely smooth.
- Dip the top of the kulfi in the white chocolate, then quickly sprinkle with pistachios before the chocolate sets (the chocolate can set in a matter of seconds).
- Either place back in the freezer in an air tight container until ready to serve or serve straight away.
