Mango Kulfi
I literally get so excited when mango season rolls around because they'd would have to be one of my favourite fruits. I got a little bit excited and bought a few too many when they were cheap so this was the perfect recipe to use some up and is a the best thing on a hot day.

- 1 cup cream
- 200 g condensed milk
- 1 large mango
- 2 cardamon pods seeds removed
- 150 g white chocolate
- 1 tsp coconut oil
- ⅓ cup pistachios chopped
Add all of the ingredients, expect the white chocolate and coconut oil, to a blender and blitz until completely smooth.
Transfer to a silicon mold, popsicle molds, or plastic cups with a popsicle stick inserted, and freeze overnight until solid.
Melt white chocolate and coconut oil in the microwave for a minute, or until completely smooth.
Dip the top of the kulfi in the white chocolate, then quickly sprinkle with pistachios before the chocolate sets (the chocolate can set in a matter of seconds).
Either place back in the freezer in an air tight container until ready to serve or serve straight away.
