Method
- Boil your pasta in a pot of salted water.
- While the pasta is boiling, fry off the bacon in a medium saucepan over med-high until the fat begins to render out.
- Add the onion, garlic and chilli and sauté until the ingredients soften and the onion becomes translucent, then add the tomato paste and sauté for a minute or two.
- Add the zucchini and olives, a splash of pasta water, and let that simmer for a few minutes.
- Add the milk and simmer again until the sauce begins to thicken slightly, about 3 minutes.
- Add the cooked pasta, toss everything together and add a splash more pasta water or milk if the sauce is a little thick. Alternately, if the sauce is still a little runny, let is simmer away for a few more minutes to allow some of the liquid to evaporate.
- Top with fresh basil and grated parmesan and serve.
