What is Burrata cheese?

Burrata cheese is a luxurious Italian cheese that has captured the hearts and palates of food lovers around the globe. Originating from the Puglia region in southern Italy, burrata is a fresh cheese made from a blend of mozzarella and cream. The outer shell is composed of a delicate mozzarella casing, while the inside is filled with a rich, creamy mixture of stracciatella and cream, giving it a distinctive, indulgent texture.

The name “burrata” translates to “buttered” in Italian, aptly reflecting the cheese’s creamy interior. Its origins date back to the early 20th century, when it was created as a way to use leftover scraps of mozzarella. The cheese quickly gained popularity for its unique taste and texture, becoming a delicacy in Italian cuisine. Today, burrata is celebrated not only for its flavor but also for its versatility, pairing beautifully with various ingredients, from fresh vegetables to pasta dishes and salads.

When burrata is cut open, it reveals a luscious, oozy center that adds an extravagant touch to any dish. Its mild, buttery flavor complements the tangy acidity of tomatoes and the savory notes of garlic and herbs, making it a perfect addition to Creamy Tomato Pasta. As burrata continues to gain acclaim, it has become a staple in upscale restaurants and home kitchens alike, embodying the essence of Italian culinary artistry.

Cook the Pasta:

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Cook the Bacon:

Heat olive oil in a large skillet over medium heat. Add the diced bacon and cook until crispy, about 3-4 minutes.

Add Garlic and Wine:

Add the minced garlic and chilli flakes to the skillet and sauté for 1-2 minutes until fragrant. Pour in the white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 3-4 minutes until the wine reduces slightly.

Add Passata and Cream:

Stir in the passata and let it simmer for 5 minutes, allowing the flavors to meld. Reduce the heat to low and stir in the cream, cooking for another 2-3 minutes. Season with salt and pepper to taste.
